NCCO International, makers of the 14 Allergen labels have expanded the range to include the Allergen Product, Date, Use by label. This records the details of what the dish is, who made it and when and when it should be used by. This is very similar to other labels used widely across the catering industry. In addition the label also shows which Allergen proteins are in the food therefore allowing comprehensive details to be held with the dish for all chefs and servers to see.
New from NCCO International the Allergen Alert WaitRpad, the innovative pad ensures that dietary requirements are recorded at the table and communicated to the back of house team. The customer tells their server they have a food allergy which the server will note on the appropriate numbered customer line. When the order reaches the kitchen the chefs will see the allergen and will be made aware of the sensitivity and can take the necessary precautions. They can also advise if the dish contains something that may cause an issue for the customer, this is then communicated back to the customer for them to make the final decision.
